Origin
Glucosylrutin is produced biotechnologically by enzymatic glycosylation of rutin (extracted from Sophora japonica buds or buckwheat) using a glucosyltransferase enzyme. This process attaches a glucose molecule to the rutin structure, greatly enhancing water solubility (from ~0.01 % for rutin to >20% for glucosylrutin) and photostability.
