Pea starch by Roquette is a pea starch. Acts as a film forming agent. It is extracted from the Pisum Sativum dry pea and it is characterized by a large part of amylose as well as a low gel temperature, which explains its film-forming properties. Pea starch has short texture and it retrogrades on cooling into a firm and opaque gel. It is neutral odorless white powder.
